Banana bread is one of my absolute favorite kinds of bread. The smell, the taste, the way it just falls apart in my mouth…oh my!!! As a kid, I remember my mom making this banana bread recipe and I could hardly wait for her to take it out of the oven. That wonderful smell would fill the whole house, and just make me smile.┬áTo this day I still eat my banana bread the same as I did when I was a kid. I toast the banana bread, butter it and cut it into strips. Still a kid at heart, I guess.

I love when my kids want to get in the kitchen with me and help me bake or cook. The kitchen brings us together, not only to cook, but make memories and spend quality time together. And this is something that means alot to me. I want my kids to remember the times we make this banana bread recipe and how the house smells so GOOOOD! Just like I did when I was a kid.

Super Easy Banana Bread Recipe

banana bread recipeThis has to be one of the easiest banana bread recipes I have ever followed for ANYTHING! Which is the way I like it because of how busy my schedule can get. The easier, the quicker, the better. Yes, I enjoy baking and cooking, but that doesn’t mean I want to spend the whole day doing it. I need time to do the things I REALLY LOVE ┬álike laundry, dishes, dusting. Ha ha, no I don’t love doing those things, but they still need to be done.

The last time I made this recipe, I didn’t have any super ripe bananas. So I quickly went to the store, bought some bananas and whipped up some banana bread. The bananas were not as ripe as I like when I eat them, but I bought them anyway. I didn’t think it would matter since I was just making banana bread. Boy was I wrong. First, it was really hard to mash the bananas up for the recipe. And secondly, it totally affected the way the bread tasted. It wasn’t very sweet and was very lumpy. Not the best when you’re trying to make this awesome banana bread recipe.

Banana Bread
This is the only banana bread recipe you need. Super EASY!

  1. First you want to cream together the 8 tablespoons of butter and 1 cup of sugar in large bowl.
  2. Add in 2 beaten eggs and the 3 mashed bananas.
  3. SLOWLY, mix in 1/2 teaspoon salt, 1 teaspoon baking soda and 1 1/4 cup all-purpose flour.
  4. Optional: 1/3 cup walnuts
  5. Pour in greased loaf pan(s).
  6. Bake at 350 degrees for 40-50 minutes.
Recipe Notes
  • Make sure the bananas are VERY ripe. The bread will turn out sweeter and it's easier to smash them up.
  • Insert a toothpick into the middle of the loaf to see if it is done. If it comes out doughy, cook for a few more minutes. If it's clean, bread should be done.
  • Crust should be light to medium brown.
