When I hear the word cobbler. My first thought is Girls Camp. Every summer while at girls camp, one of my leaders would make a killer cobbler in the dutch oven. It quickly became a tradition that I remember fondly. We had all kinds of cobbler, but Apple Cobbler is by far my favorite. Although, I am past my years of girls camp. Not by many though, maybe 2 or 3. 😉 Eating a nice warm piece of oven baked Apple Cobbler with some sweet vanilla ice cream, makes me feel like a kid again.
Great Way to Use Up the Fall Apple Harvest
Recently, my mother-in-law came to visit. She couldn’t help but notice my counter top being covered with apples. A good friend of mine was so kind to give me 2 bags stuffed full of apples, from her yard. I had them all washed and ready to go, but wasn’t sure how I wanted to use them. We definitely love apples at my house, but there was no way we could use them all by having the occasional apple for a snack. I even gave a few to our chickens and our rabbit. That is where my mother-in-law comes into play. She told me about this super easy oven baked apple cobbler recipe she has. Although, it wasn’t until after she left that I made the recipe.
One morning I whipped the recipe together with the help of my fantastic husband. 🙂 He can core and cut apples like a ninja. Who knew? I can’t even begin to explain how amazing this made my house smell. In fact, I could smell it all the way out into my garage while I was working out.
When making the recipe I did make a couple small changes. I substituted the sugar with Stevia and brown sugar. It is possible to eat yummy desserts while also being mindful of calories and carbs. Sure, this is by no means a healthy recipe, but even lowering the calories some, so okay with me. I honestly, couldn’t tell that I used Stevia over sugar. The taste was still delicious!
